A traditional and very popular recipe of Astypalea.

  • Half a kilo of lentils
  • 2 tomatoes
  • Half a cup of olive oil
  • 1 medium onion
  • A teaspoon of tomato paste (for color)
  • 2 bay leaves
  • 2 cloves of garlic
  • Salt and Pepper
  • 4 cups water
  • 2 cups flour
  • Mint
  • A teaspoon of vinegar

Pour into saucepan lentils, tomatoes, olive oil and cook for 40 minutes over medium heat.

In skillet saute the onion with a little olive oil and immediately add to the pot with the lentils.
In a bowl add the flour and water and mold for 5 minutes.
Shape small balls and pour in the lentils with mint and vinegar.

Cook for 5 minutes over low heat and the food is ready.
