Saffron is the most expensive spice in the world and for this it is considered the "gold" product of Astypalea.

It's derived from the flower of Crocus sativus, commonly known as the "saffron crocus". Saffron crocus grows to 20–30 cm and bears up to four beautiful light purple flowers. The plant grows wild all around the mountains of the island and is hand picked and dried with a natural way. 

Saffron can be found as an ingredient in local recipes such as yellow sweet cookies.
